This course provides students with the training and skill development in food and beverage services.
Employment opportunities exist in the hospitality industry in numerous areas, including: hotels;
motels; casinos; gaming venues; clubs; restaurants and reception and function centres.
Practical placement is given to students in Holmesglen’s student training restaurants with further
opportunities available in leading 5-star hospitality venues in Melbourne. On completion of this
course students can continue into the Advanced Diploma of Hospitality or any of the culinary
streams. On completion of the Advanced Diploma, students may apply for entry into Holmesglen’s
Bachelor of Hospitality Management or the Charles Sturt University Bachelor of Hotel Management
delivered at Holmesglen.
Certificate III in Retail
Baking - Combined

This course provides students with the skills and knowledge of a baker.
It aims to prepare participants for work within bakeries, specialty cake shops, or international
hotels, large department stores or manufacturing firms, in the hospitality and food processing
industries.
Graduates will have multiple skills to produce a wide range of bread, cake and pastry products.
Students will learn about baking pastry production, cake and sponge making, cookie making, sweet
yeast goods such as croissant and Danish pastry, artisan breads and various decorating skills.
Holmesglen staff can assist students in obtaining work placement or employment in the bakery
industry whilst undertaking this course.
On successful completion of this course, students are eligible to apply for one more year of study
to undertake the Advanced Diploma of Hospitality to acquire further skills for supervisory positions
within hospitality, retail bakery and cake and pastry establishments. On completion of the Advanced
Diploma, students may apply for entry into Holmesglen’s Bachelor of Hospitality Management or the
Charles Sturt University Bachelor of Hotel Management delivered at Holmesglen.

This course will qualify graduates as a commercial cook.
The qualification provides the skills and knowledge for an individual to be competent as a cook.
It aims to prepare participants for work within the hospitality industry in areas such as hotels,
restaurants, pubs, clubs and catering businesses. Graduates will learn multiple techniques to
produce a wide range of speciality food items and gain work ready skills highly sought after by
industry. Students will also acquire leadership and supervisory skills which will enable them to run a
successful business.
Practical placement is given to students in Holmesglen’s student training restaurants with further
opportunities available in leading 5-star hospitality venues in Melbourne. Holmesglen staff can also
assist students in obtaining employment in the hospitality industry whilst undertaking this course.

undertake the Advanced Diploma of Hospitality to acquire further skills for supervisory positions
